Balsamic Baked Strawberries

Strawberries are my favourite thing about summer. I love them, everything about strawberries makes me happy. They always are in season at the start of summer when everything starts to get hot and nearing Christmas time. Strawberries are also juicy, full of flavour and bursting with colour. How can you not be happy when eating strawberries?

img_1086-1I was so happy when I found out that strawberries were low in carbohydrates. With only 7g of carbs per 100g, I can happily eat a few strawberries and not worry about my blood sugar levels spiking. They are also filled with fibre, antioxidants, manganese, folate and vitamin C making them great for weight loss and heart health. Due to the high levels of Vitamin C, strawberries can also help towards negative feelings, anxiety and depression.

I definitely don’t need any more excuse to keep eating strawberries but another thing I love about them is that you can add them to absolutely anything and it will taste amazing, especially into a glass of bubbles.

Enjoy these strawberries as a side to any type of cake, raw cheesecake or torte to add some sweetness to your dessert.

Balsamic Baked Strawberries. (Based on Petite Kitchen)

3 cups of strawberries roughly chopped

¼ cup of red wine

¼ cup of balsamic vinegar

Serve with Mascarpone as little or alot as you like.

  1. In a baking dish add the strawberries, red wine and balsamic vinegar and allow to marinate for 1 hour.
  2. Preheat the oven to 180
  3. Pop the baking dish into the oven and bake for 30 minutes, giving the strawberries a stir at the half way mark.
  4. Add mascarpone and chopped nuts to serve.
