Mexican Fiesta

I love dinner parties and having all of my friends and family around me enjoying a delicious and tasty meal. My family has always been brought up that catch up’s and hangouts always involve food. We take any opportunity to invite the entire family, which is around 30 people, over and have a huge potluck dinner.

Potluck dinners are my favourite, you get to try so many different foods and people’s recipes. However, in a smaller situation they can be overwhelming with how much food there is to eat. In smaller situations with just a few friends over I love putting together a dish where we can still enjoy making our own food and how we like without having a potluck, a ‘sharing meal’.

These fish tacos are the perfect for a smaller dinner party. They are easy to make and the tacos can be prepared before so that you are not rushing around in the kitchen while your guests are enjoying themselves. Being able to put together and make your own taco allows your guests to make their taco how they enjoy it and it creates a bit of fun seeing what combinations others put together.

Go all out and have a Mexican Fiesta night with margaritas, sombreros and plenty of tacos.

 

Mexican Fiesta: Low Carb Tacos!

For fish:

600g of Hoki fillets

juice of ½ a lime

1 tbsp olive oil

½ tsp cumin

1 tsp paprika

½ tsp of ground chili powder

Marinate the fish for 10 minutes and then fry in the marinade juices until fish is cooked through.

For Dressing:

Juice of ½ a lime

½ tsp cumin

1 tsp paprika

½ tsp of ground chili powder

½ cup of greek yoghurt.

Mix all together in small bowl.

For Guacamole:

1 avocado mashed

1 tomatoes diced finely

salt and pepper to taste

juice of ½ of a lime

Mix all together in a small bowl.

For Taco Base:

2 eggs

1 cup of coconut milk/full fat milk

¾ cup of tapioca flour/arrowroot

3 tbsp of coconut flour

pinch of salt flakes

2 tbsp olive oil

Pop everything into a bowl and mix well until no lumpy bits. Leave to sit for around 5-10minutes. Heat oil in a pan on a medium heat. Place 1/3cup of the mixture into the pan and lead spread evenly. Leave for 2 minutes before flipping and cook the other side for 1minute. (You will know when ready to be flipped, as the bottom is a golden brown colour). Leave to sit until ready to eat tacos.
