As you guys know from reading my blogs my partner and I LOVE cauliflower mash with EVERYTHING. It is the perfect low carb side dish to add veggies to your dish and there is always something homely about eating mash potato’s
So here is my recipe so you too can fall in love and eat it for almost every meal.
Cauliflower ‘Mash Potato’
Makes 4 servings
1 medium size cauliflower
3tbsp Parmesan cheese
Sprinkle of mixed herbs
Cream (Amount depending on how creamy you like your mash)
- Cut the cauliflower florets into small pieces. Put into a medium size pot of boiling water and wait until cooked/soft. About 7 minutes
- Drain the excess water, and excess water from cauliflower with a cheese drainer or tea towel
- Place all ingredients into a food processor. (Can use a blender but may have to do it little by little depending on the size of your blender)
- Blend until you have reached the consistency you are happy with. I normally like mine still quit chunky.
Note: You can also add broccoli into the cauliflower mash to get some greens in your meal.
Enjoy with your favorite side of meat or for a meat free dinner add a Portobello mushroom and courgettes.
